Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 2 egg whites or 1/4 cup egg substitute
  • 1 1/4 cups plain nonfat yogurt
  • 1/4 cup vegetable oil

Instructions

  1. Combine cornmeal, flour, baking powder, soda, salt, and sugar in a large bowl.
  2. Make a well in the center of the mixture.
  3. Combine egg whites, yogurt, and oil; add to the dry ingredients, stirring just until moistened.
  4. Spoon mixture into muffin pans coated with spray.
  5. Bake at 425°F for 12 to 14 minutes, or until golden brown.
  6. Remove from pans immediately.
