Crawfish Creole

Ingredients
- 1/4 cup salad oil ⓘ
- 1 cup chopped onion ⓘ
- 1 cup chopped celery ⓘ
- 1 cup chopped bell pepper ⓘ
- 3 1/2 cups stewed tomatoes ⓘ
- 1 cup tomato sauce ⓘ
- 2 whole bay leaves ⓘ
- 1 tablespoon sugar ⓘ
- 1 tablespoon salt ⓘ
- 1 tablespoon chili powder ⓘ
- 1/8 teaspoon Tabasco
- 2 pounds cooked, cleaned crawfish tails ⓘ
- 2 tablespoons flour ⓘ
- 1/3 cup water ⓘ
Instructions
- Preheat electric skillet to 300°F.
- Pour in oil and sauté onions, celery, and green pepper until tender but not brown.
- Add stewed tomatoes, tomato sauce, bay leaves, sugar, salt, chili powder, and Tabasco.
- Mix well, then add crawfish tails.
- Cover and reduce temperature. Simmer for 30 minutes or longer.
- Mix flour and water to make a slurry.
- Add the flour-water mixture to the simmering mixture and cook for about 5 minutes longer or until thickened.
- Serve the Crawfish Creole over cooked rice.
