Ingredients

  • 1/4 cup salad oil
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 3 1/2 cups stewed tomatoes
  • 1 cup tomato sauce
  • 2 whole bay leaves
  • 1 tablespoon sugar
  • 1 tablespoon salt
  • 1 tablespoon chili powder
  • 1/8 teaspoon Tabasco
  • 2 pounds cooked, cleaned crawfish tails
  • 2 tablespoons flour
  • 1/3 cup water

Instructions

  1. Preheat electric skillet to 300°F.
  2. Pour in oil and sauté onions, celery, and green pepper until tender but not brown.
  3. Add stewed tomatoes, tomato sauce, bay leaves, sugar, salt, chili powder, and Tabasco.
  4. Mix well, then add crawfish tails.
  5. Cover and reduce temperature. Simmer for 30 minutes or longer.
  6. Mix flour and water to make a slurry.
  7. Add the flour-water mixture to the simmering mixture and cook for about 5 minutes longer or until thickened.
  8. Serve the Crawfish Creole over cooked rice.
