Southern Mexican Corn Bread

Ingredients

  • 1 1/2 lb. ground chuck
  • salt and pepper
  • 3/4 c. self-rising cornmeal
  • 1 small onion, chopped
  • 2 c. shredded Cheddar cheese
  • 3 jalapeno peppers, diced
  • 3 eggs, beaten
  • 1 c. buttermilk
  • 1 (17 oz.) can cream-style corn

Instructions

  1. Brown seasoned chuck.
  2. Drain and set aside.
  3. Combine all other ingredients.
  4. Spoon 1/2 batter into 2-quart casserole that's been sprayed with vegetable spray, then pour browned chuck in topping with remaining batter.
  5. Bake at 350° for 45 to 50 minutes.
