Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. vegetable oil
  • 4 c. water
  • 2 c. long grain rice, uncooked
  • 4 chicken-flavored bouillon cubes
  • 3 Tbsp. lemon juice
  • 1/2 c. fresh parsley

Instructions

  1. Saute onions and garlic in vegetable oil.
  2. Add water, rice, bouillon cubes, and lemon juice to the skillet.
  3. Bring to a boil; cover and reduce heat.
  4. Simmer for 20 minutes, until rice is tender and liquid is absorbed.
  5. Stir in chopped fresh parsley.
  6. Serve hot. Recipe can be halved if desired.
