Instructions

  1. Cook the stewing hen until tender in plenty of water to be used as broth later.
  2. Let the chicken cool, then skin and debone it.
  3. Refrigerate the cooked chicken.
  4. Cook a large skillet of self-rising corn bread using 3 to 4 eggs.
  5. Remove the cooked cornbread from the skillet and place it in a large mixing bowl.
  6. Add 6 thick or 8 thin slices of bread to the bowl.
  7. Pour enough broth over the bread to cover it.
  8. Dissolve the can of cream of chicken soup in additional broth if needed, then pour this over the bread mixture.
  9. Use poultry seasoning and 2 bouillon chicken cubes, if desired, to enhance flavor.
  10. Set the mixture aside to allow the bread to soften before serving.
