Southwest Beef Rolls

Juicy beef rolls filled with flavorful cornbread stuffing, simmered in a spicy tomato and chili sauce for a hearty, southwestern-inspired meal perfect for family dinners.

Ingredients

  • 3/4 cup cornbread stuffing mix
  • 4 (4 oz) steaks
  • 14 1/2 oz can stewed tomatoes
  • 4 oz can green chilies, drained, rinsed and chopped
  • 1 tablespoon chili powder

Instructions

  1. Moisten the cornbread stuffing mix with 3 tablespoons hot water.
  2. Spread the stuffing onto the top of each steak.
  3. Roll up each steak and fasten with a toothpick.
  4. Brown the rolled steaks in a nonstick skillet over medium heat for about 6 minutes.
  5. Add the stewed tomatoes, green chilies, chili powder, and 1/4 cup water to the skillet.
  6. Bring the mixture to a boil.
  7. Reduce the heat and simmer for 20 to 30 minutes until the beef is tender.
