  • 1 can green chili peppers, seeded and chopped (with juice)
  • 1 cup chopped fresh parsley
  • 1 can hominy, drained
  • 1 can black-eyed peas, drained
  • 2 large leaves fresh cilantro, finely chopped
  • 1 small jar Paul Newman Italian dressing
  • salt and pepper to taste
