Ingredients

  • 1 large sweet onion, chopped
  • 1 large red bell pepper, chopped
  • 2 to 3 jalapeno peppers, finely chopped
  • 6 to 8 scallions, chopped (including tops)
  • 1 can green chili peppers, seeded and chopped (with juice)
  • 1 cup chopped fresh parsley
  • 1 can hominy, drained
  • 1 can black-eyed peas, drained
  • 2 large leaves fresh cilantro, finely chopped
  • 1 small jar Paul Newman Italian dressing
  • salt and pepper to taste

Instructions

  1. Mix all the ingredients together in a large bowl.
  2. Refrigerate for 24 hours or more to allow flavors to develop.
  3. Serve chilled as a dip or topping.
