Ingredients

  • 1/4 cup vegetable oil
  • 1/4 cup vinegar
  • 2 tablespoons chili powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon coarse ground black pepper
  • 1 garlic clove, minced
  • 1 can navy beans
  • 1 can red kidney beans
  • 6 ounces Cheddar cheese, cut into chunks
  • 1 spring onion, chopped fine
  • 1 green pepper, chopped fine

Instructions

  1. In a large bowl, whisk together vegetable oil, vinegar, chili powder, salt, black pepper, and minced garlic.
  2. Add navy beans, red kidney beans, Cheddar cheese chunks, chopped spring onion, and chopped green pepper.
  3. Gently toss to mix well. Cover and refrigerate until ready to serve.
