Southwestern Eggs combine spicy chorizo, colorful bell peppers, and melted cheese, topped with fresh salsa for a hearty breakfast that’s perfect for weekend brunch or a quick meal.

Ingredients

  • 1 lb. bulk chorizo sausage
  • 1/2 cup chopped onion
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 1/4 cups prepared salsa
  • 4 eggs
  • 3/4 cup shredded Chihuahua or Mozzarella cheese

Instructions

  1. Cook the chorizo, chopped onion, and green bell pepper in a 10-inch skillet over medium heat, stirring occasionally, until the sausage is brown. Drain excess fat.
  2. Stir in prepared salsa and heat until hot.
  3. Spread the mixture evenly in the skillet.
  4. Make four indentations in the mixture with the back of a spoon.
  5. Break one egg into each indentation.
  6. Cover and cook over low heat for about 12 minutes, or until whites are set and yolks are thickened.
  7. Sprinkle with shredded cheese.
  8. Serve with sour cream if desired.
