- Cook the chorizo, chopped onion, and green bell pepper in a 10-inch skillet over medium heat, stirring occasionally, until the sausage is brown. Drain excess fat.
- Stir in prepared salsa and heat until hot.
- Spread the mixture evenly in the skillet.
- Make four indentations in the mixture with the back of a spoon.
- Break one egg into each indentation.
- Cover and cook over low heat for about 12 minutes, or until whites are set and yolks are thickened.
- Sprinkle with shredded cheese.
- Serve with sour cream if desired.
