Ingredients

  • 1/2 lb. large shrimp
  • 1/4 cup finely chopped cilantro
  • 1 finely chopped jalapeno
  • 2 Tbsp. olive oil
  • plain boiled rice
  • 1/4 cup finely chopped green onion
  • 1/4 cup tomato sauce

Instructions

  1. Peel and devein the shrimp; cut them in half.
  2. Heat olive oil in a nonstick pan over medium-high heat.
  3. Saute chopped green onion, cilantro, and jalapeno in the oil for 5 minutes.
  4. Stir in tomato sauce.
  5. Add the prepared shrimp and cook until they turn pink.
  6. Serve the shrimp mixture over plain boiled rice.
