Ingredients

  • 1 lb. spaghetti
  • 1 lb. Prosciutto
  • 8 Tbsp. butter
  • 1/4 cup minced parsley
  • 2 well beaten eggs
  • 1 cup grated Parmesan cheese
  • salt and white pepper
  • 1/4 cup cream

Instructions

  1. Finely chop the Prosciutto.
  2. Cook the Prosciutto in 4 Tbsp. melted butter until crisp.
  3. Cook the spaghetti according to package instructions until al dente.
  4. In a bowl, beat the eggs and mix in grated Parmesan cheese, minced parsley, salt, and white pepper.
  5. Drain the spaghetti, reserving some cooking water.
  6. Combine hot pasta with the Prosciutto and butter mixture.
  7. Remove from heat and quickly stir in the egg and cheese mixture, adding reserved cooking water if needed to loosen the sauce.
  8. Stir in cream or half and half for extra richness.
  9. Serve immediately, garnished with additional parsley if desired.
