Ingredients

  • 1 (12 oz.) pkg. vermicelli spaghetti
  • 1 whole chicken (fryer)
  • 1 can Ro-Tel tomatoes
  • 1 can English peas
  • 1/2 lb. American cheese
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 1 1/2 sticks butter

Instructions

  1. Boil the whole chicken in seasoned water and save the broth.
  2. Remove the chicken from the bone and set aside.
  3. Cook the vermicelli spaghetti in the chicken broth, then drain.
  4. Grate the American cheese and add it to the drained spaghetti.
  5. Saute the chopped bell pepper and onion in 1 1/2 sticks of butter, then add to the spaghetti mixture.
  6. Add the Ro-Tel tomatoes, optional English peas, and shredded chicken to the spaghetti. Mix well.
  7. Pour the mixture into a greased casserole dish.
  8. Bake at 325°F for 1 hour.
