Ingredients

  • 1/2 c. coarsely chopped carrots
  • 1/2 c. chopped celery
  • 3/4 c. boiling water
  • 1/4 c. chopped onion
  • 3 Tbsp. margarine
  • 1/4 c. flour
  • 2 c. milk
  • 1 (13 1/2 oz.) can chicken broth
  • 1 1/2 c. Velveeta, shredded

Instructions

  1. Cook carrots and celery in boiling water until tender; do not drain.
  2. Cook onion in margarine until just tender.
  3. Stir in flour. Gradually add milk.
  4. Cook and stir until thick.
  5. Add broth, cheese, and vegetables.
  6. Stir over low heat until cheese melts.
