Ingredients

  • 1 sweet onion
  • 1/4 lb. bacon
  • 1/4 c. oil
  • 1/2 c. chicken broth
  • 1/2 c. parsley
  • 8 oz. thin spaghetti noodles
  • 1/4 lb. prosciutto or boiled ham
  • 1/2 c. whipped butter
  • 4 egg yolks
  • 1 c. grated Parmesan cheese

Instructions

  1. Cook 8 ounces of spaghetti in 4 quarts of boiling, salted water for 10 minutes or until tender.
  2. While the pasta cooks, sauté the chopped onion and bacon in oil until the onion is translucent and the bacon is browned.
  3. Add chicken broth and parsley to the skillet and simmer for a few minutes.
  4. Drain the cooked spaghetti and add it to the skillet, tossing to combine.
  5. Stir in the whipped butter and grated Parmesan cheese until melted and well incorporated.
  6. In a separate bowl, beat the egg yolks, then quickly mix them into the hot pasta mixture, stirring rapidly to prevent the eggs from scrambling.
  7. Add sliced prosciutto or boiled ham, mixing well.
  8. Serve immediately, garnished with extra parsley and Parmesan if desired.
