Ingredients

  • 1 lb. whole wheat spaghetti
  • 2 medium zucchini, shredded
  • 1 cup bean sprouts
  • 2 Tbsp. chopped scallions
  • 1 (32 oz.) jar spaghetti sauce with mushrooms
  • 3/4 cup grated Parmesan cheese

Instructions

  1. Cook spaghetti as instructed on package.
  2. Just before draining, add shredded zucchini and bean sprouts; drain immediately.
  3. In a medium pan, heat the spaghetti sauce with mushrooms.
  4. Place the cooked spaghetti and vegetables on a large platter.
  5. Pour the sauce over the pasta and vegetables, then add grated Parmesan cheese.
  6. Toss well to combine and serve.
