Ingredients

  • 1/3 cup corn oil
  • 2 cups sliced mushrooms
  • 3/4 cup chopped onion
  • 1 (10 oz.) package frozen chopped spinach, thawed and well drained
  • 1 (16 oz.) container low-fat cottage cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon pepper
  • 1 (8 oz.) package thin spaghetti, cooked and drained

Instructions

  1. Lightly oil a 10 x 6 x 2-inch baking dish.
  2. In a large skillet, heat corn oil over medium heat.
  3. Add sliced mushrooms and chopped onion. Stir and cook for 5 minutes or until tender.
  4. Stir in thawed, drained chopped spinach; cook for 2 minutes longer.
  5. Stir in low-fat cottage cheese, salt, ground nutmeg, and pepper until smooth.
  6. Toss the mixture with cooked and drained spaghetti until well coated.
  7. Place the spaghetti-spinach mixture into the prepared baking dish.
  8. Top with sliced mozzarella cheese.
  9. Bake in a 425°F oven for 20 minutes or until heated through and cheese is melted and slightly browned.
