Ingredients

  • 2 cups spaghetti squash
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 4 tablespoons flour
  • 1 cup evaporated milk
  • 3/4 cup water
  • 3 egg yolks or 2 whole eggs
  • 2 tablespoons coconut extract

Instructions

  1. Microwave the squash on high for 6 minutes per pound, making sure there are several slits in the skin of the squash.
  2. Allow the squash to cool, then cut it open and remove the seeds and discard them.
  3. Use a fork to scrape out the squash pulp and set aside.
  4. In a mixing bowl, combine sugar, brown sugar, and flour.
  5. Add evaporated milk, water, egg yolks or eggs, and coconut extract to the dry ingredients and mix well.
  6. Pour the mixture into a prepared pie crust or baking dish.
  7. Bake at 350°F (175°C) for approximately 45-50 minutes or until set and lightly browned.
  8. Allow to cool before serving.
