A vibrant Spanish-inspired avocado salad combining fresh cherry tomatoes, olives, green chilies, and a tangy vinaigrette, perfect for light, flavorful gatherings or lunch.

Ingredients

  • 1 pint cherry tomatoes, halved
  • 6 oz. can ripe olives, drained
  • 1 small onion, chopped
  • 4 oz. chopped green chilies, drained
  • 1/2 cup plus 2 tablespoons vegetable oil
  • 3 tablespoons vinegar
  • 1 teaspoon salt
  • 3 dashes hot sauce
  • lettuce

Instructions

  1. Combine cherry tomatoes, drained olives, chopped onion, and chopped green chilies; set aside.
  2. Combine vegetable oil, vinegar, hot sauce, and garlic salt; mix well.
  3. Reserve 3 tablespoons of the dressing and pour the remaining over the tomato mixture; toss gently.
  4. Line a serving dish with lettuce, brush the avocados with the reserved dressing, and serve all on the lettuce.
