Ingredients

  • 2 Tbsp. olive oil
  • 1 1/2 cup brown rice
  • 1/2 bell pepper, chopped
  • 1 Vidalia onion, chopped
  • 2 Tbsp. chili powder
  • 1 tsp. cooked, chopped garlic
  • 1 large can crushed tomatoes
  • 1 can water
  • grated Cheddar cheese

Instructions

  1. Brown garlic, rice, and onion in olive oil.
  2. Add chopped bell pepper and cook until tender.
  3. Add chili powder, crushed tomatoes, and water.
  4. Bring to a boil and reduce heat to low.
  5. Cook until all liquid is absorbed and rice is tender, about 45 minutes.
  6. Check after 25 minutes and add more water if needed.
  7. Serve with grated Cheddar cheese on the side, adding cheese just before eating.
