Ingredients

  • 1/2 cup sugar for caramelizing
  • 8 large egg yolks
  • 1 large egg
  • 9 heaping tablespoons sugar
  • 2 cups milk

Instructions

  1. Pour 1/2 cup sugar into a tube pan or mold that can go on a burner.
  2. Set the pan on medium-low heat and cook until the sugar begins to melt.
  3. Stir with a wooden spoon to ensure even melting.
  4. Use a hot pad to tilt the pan and coat the bottom and sides with caramel. Set aside.
  5. In a large bowl, mix together the egg yolks, whole egg, sugar, and milk until smooth.
  6. Add vanilla to the mixture and stir well.
  7. Pour the custard mixture through a sieve into the caramelized sugar mold.
  8. Discard any gook remaining in the sieve.
  9. Place the mold in a baking dish with hot water and bake at 350°F for 45 to 55 minutes, or until a toothpick inserted 1/2 inch from the center comes out clean.
  10. Allow the flan to cool completely.
  11. Run a knife around the edge of the mold and invert onto a serving plate.
  12. Keep the mold upside-down on the plate to let the caramel drip out.

Tips & Substitutions

For a smoother flan, strain the custard mixture twice before pouring it into the mold. If you don’t have enough milk, you can substitute part of it with heavy cream for a richer texture. Use a low heat when caramelizing the sugar to prevent burning, and consider adding a pinch of salt to enhance the flavor of the custard.

Serving Suggestions

Serve the flan chilled, garnished with fresh berries or a dollop of whipped cream for added richness. It pairs beautifully with Vanilla And Carob Ice Cream for a delightful dessert experience. A sprinkle of toasted nuts on top can also add a nice crunch and flavor contrast.

Storage & Reheating

Store any leftover flan in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm slices in the microwave for 10-15 seconds or serve cold, as flan is delicious chilled. Avoid reheating the entire dish, as it may alter the texture.

Frequently Asked Questions

Can I use a different type of sugar for the caramel?

You can use brown sugar for a deeper flavor, but keep in mind that it may alter the color and taste of the caramel slightly. Just ensure to cook it until it reaches the desired amber color, being careful not to let it burn.

What if my flan doesn't set properly?

If your flan is still liquid after baking, it likely needs more time in the oven. Check it after 5-minute intervals until a toothpick comes out clean. Ensure your oven is fully preheated and consider using an oven thermometer for accuracy.

Can I add flavors to the custard?

Absolutely! You can infuse the milk with ingredients like cinnamon, orange zest, or even coffee before mixing it with the eggs and sugar. Just strain out any solid pieces before pouring it into the mold to keep the texture smooth.
