Ingredients

  • 4 eggs
  • 1/2 cup flour
  • 1 teaspoon cinnamon
  • 2/3 cup sugar
  • 1/2 teaspoon baking powder
  • 3 tablespoons sugar
  • 1/2 teaspoon baking soda
  • 1/2 tablespoon vegetable oil
  • 3 tablespoons cold water

Instructions

  1. Beat the eggs, flour, cinnamon, 2/3 cup sugar, and baking powder until well combined.
  2. Add 3 tablespoons sugar, baking soda, vegetable oil, and cold water to the mixture and beat until smooth.
  3. Pour the batter into a jelly roll pan lined with waxed paper.
  4. Bake at 375°F (190°C) for 15 minutes or until the cake is set.
  5. Remove from oven, turn onto a tea towel, and roll up until cool.
  6. Unroll the cake and spread ice cream evenly over it.
  7. Roll up again, wrap in foil, and freeze until firm.
  8. Slice to serve and enjoy.
