Ingredients

  • 1 cup shortening
  • 1 1/2 cups brown sugar, packed
  • 2 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • 2 cups salted Spanish peanuts

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Mix thoroughly the shortening, brown sugar, eggs, and vanilla.
  3. Sift together the flour and baking soda, then stir into the wet mixture.
  4. Add salted Spanish peanuts and combine well.
  5. Drop rounded teaspoonfuls of dough about 2 inches apart onto a greased cookie sheet.
  6. Flatten each cookie with a glass dipped in water, then sugar.
  7. Bake for about 10 minutes until golden brown.
