Ingredients

  • 1 pound lean ground beef or buffalo meat
  • 1 can beef broth (about 14 ounces)
  • 1 small green bell pepper, cut into 1/2-inch pieces
  • 1/2 cup pimiento stuffed green olives, sliced
  • 1/2 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried thyme leaves
  • 1 1/3 cups water
  • 1 cup uncooked couscous

Instructions

  1. Heat a skillet over high heat until hot.
  2. Add the ground beef and cook until browned.
  3. Pour off excess fat from the skillet.
  4. Place beef, beef broth, bell pepper, olives, onion, garlic, cumin, and thyme into a slow cooker.
  5. Cover and cook on LOW for 4 hours or until the bell pepper is tender.
  6. Meanwhile, bring water to a boil in a small saucepan.
  7. Stir in the uncooked couscous, cover, and remove from heat.
  8. Let stand for 5 minutes, then fluff with a fork.
  9. Spoon couscous onto plates and top with the beef mixture.
