Ingredients

  • 1 cup Marinara Sauce
  • 4 large baking potatoes
  • 0.5 lb lean ground beef or ground turkey
  • 1 large onion
  • 1 clove garlic
  • 0.25 cup green pepper
  • 0.25 cup fresh mushrooms
  • 0.25 cup sliced black olives
  • 1 teaspoon oregano
  • 0.125 teaspoon cinnamon
  • 0.25 cup low-fat plain yogurt
  • black pepper

Instructions

  1. Scrub and pierce the potatoes, then bake in a preheated oven at 400°F for 45 to 50 minutes until tender.
  2. While potatoes are baking, cook the ground meat, chopped onion, minced garlic, chopped green pepper, and sliced mushrooms in a heavy skillet over medium heat until the meat is no longer pink, stirring occasionally.
  3. Add marinara sauce, sliced black olives, oregano, and cinnamon to the skillet, then simmer for 10 to 15 minutes to blend flavors.
  4. Once potatoes are baked, split them lengthwise and press the ends together to open up the centers.
  5. Fluff the potato centers with a fork, then top each with a serving of the meat sauce.
  6. Finish by topping each stuffed potato with a dollop of low-fat plain yogurt before serving.
