Ingredients

  • 2 c. white rice
  • 3 1/4 c. water
  • 4 Tbsp. small kidney beans
  • 3 Tbsp. vegetable oil
  • 3 Tbsp. tomato paste
  • 1 pkg. sazon (yellow rice)
  • 4 Tbsp. Goya frozen sofrito

Instructions

  1. Rinse the white rice to remove excess starch and place it in a microwave-safe dish.
  2. Add water, kidney beans, vegetable oil, tomato paste, sazon, and frozen sofrito to the rice and stir to combine.
  3. Microwave on high for 15 minutes, then stir the mixture.
  4. Continue microwaving for an additional 35 minutes or until the rice is tender.
