Ingredients

  • 9 lb. medium sized, firm peaches
  • 3 lb. sugar
  • 1 1/2 cups apple-cider vinegar
  • 5 sticks cinnamon
  • 4 whole cloves per peach
  • 1 tsp. ground allspice
  • 1 tsp. grated fresh ginger

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Dip peaches in scalding hot water for a few seconds.
  3. Slip off skins while hot.
  4. Insert 4 cloves into each peeled peach and place in a roasting dish.
  5. Mix sugar, apple-cider vinegar, cinnamon sticks, ground allspice, and grated ginger in a bowl.
  6. Pour the mixture over the peaches, ensuring they are covered with liquid.
  7. Cover the dish and bake until peaches are tender and syrup is thickened, about 3 hours.
