Ingredients

  • 1/4 tsp. fennel seed
  • 1/4 tsp. mustard seed
  • 1/4 tsp. whole black peppercorns
  • 1 to 2 Tbsp. (up to 2 1/2 lb.) boneless beef round rump roast
  • 1 c. sliced fresh mushrooms
  • 1 c. skim milk
  • 1 Tbsp. cornstarch
  • 1/2 tsp. beef instant bouillon
  • 1 Tbsp. Dijon mustard

Instructions

  1. Crush fennel seed, mustard seed, and whole black peppercorns. Set aside.
  2. Trim fat from the beef round rump roast.
  3. Place the roast on a rack in a shallow roasting pan.
  4. Roast in the oven until desired doneness is reached (time not specified).
  5. Remove the roast and let it rest before slicing.
  6. In a saucepan, combine sliced fresh mushrooms, skim milk, beef instant bouillon, and Dijon mustard.
  7. Cook over medium heat until mushrooms are tender and mixture is heated through.
  8. Mix cornstarch with a small amount of water to make a slurry, then stir into the mushroom mixture to thicken.
  9. Serve the sliced beef with the mushroom gravy.
