Ingredients

  • 4 lb. ripe firm cantaloupe
  • 2 c. cider vinegar
  • 2 c. water
  • 4 c. sugar
  • 1 Tbsp. cinnamon
  • 1 Tbsp. allspice
  • 1 tsp. ground cloves

Instructions

  1. Remove the rind and seeds from the cantaloupe and cut into 1-inch cubes.
  2. In a large saucepan, bring the cider vinegar, water, sugar, cinnamon, allspice, and cloves to a boil.
  3. Add the cantaloupe cubes to the saucepan and boil for 15 minutes.
  4. Remove the melon cubes and continue to simmer the syrup until it starts to thicken, about 20 minutes.
  5. Put the melon cubes back into the pan and pour the syrup over them.
  6. Transfer the mixture into glass jars and let cool.
  7. Refrigerate until ready to serve.
