Ingredients

  • 2 (16 oz.) cans chunky mixed fruit in juice or lite syrup
  • 2 Tbsps. brown sugar
  • 1 Tbsp. cornstarch
  • 1/2 tsp. curry powder
  • 1/2 tsp. dry mustard
  • 1/2 cup small pitted prunes
  • 1/2 cup dried apricots
  • 2 Tbsps. chopped peanuts (optional)

Instructions

  1. Drain the canned mixed fruit, reserving all liquid in a saucepan.
  2. Set the drained fruit aside.
  3. Mix brown sugar, cornstarch, curry powder, and dry mustard with the reserved liquid until well blended.
  4. Stir in the prunes and dried apricots.
  5. Cook over medium heat, stirring frequently, until the mixture boils and thickens.
  6. Add the drained fruit to the saucepan.
  7. Continue cooking, stirring occasionally, until the mixture is just heated through.
  8. Serve immediately, garnished with chopped peanuts if desired.
