Spiced Pickled Peaches

Sweet and spicy pickled peaches infused with warm spices and ginger, perfect as a tangy preserve or unique condiment for summer gatherings and cheese platters.

Ingredients

  • 1 piece ginger root
  • 1 Tbsp. whole cloves
  • 1 Tbsp. allspice
  • 8 c. sugar
  • 4 c. water
  • 4 c. cider vinegar
  • 6 lb. ripe peaches, peeled

Instructions

  1. Tie ginger root, whole cloves, and allspice in cheesecloth to create a spice bag.
  2. Add the spice bag to boiling water and vinegar mixture.
  3. Add half of the peeled peaches to the boiling mixture.
  4. Cook until peaches are tender, about 10 to 15 minutes.
  5. Pack the cooked peaches into hot jars, leaving 1/4 inch headspace.
  6. Remove the spice bag from the syrup and heat the syrup to boiling.
  7. Pour the hot syrup over the peaches in the jars.
  8. Seal the jars immediately.
  9. Process the jars in boiling water for 15 minutes to ensure proper preservation.
