- Tie ginger root, whole cloves, and allspice in cheesecloth to create a spice bag.
- Add the spice bag to boiling water and vinegar mixture.
- Add half of the peeled peaches to the boiling mixture.
- Cook until peaches are tender, about 10 to 15 minutes.
- Pack the cooked peaches into hot jars, leaving 1/4 inch headspace.
- Remove the spice bag from the syrup and heat the syrup to boiling.
- Pour the hot syrup over the peaches in the jars.
- Seal the jars immediately.
- Process the jars in boiling water for 15 minutes to ensure proper preservation.
