A hearty Middle Eastern lentil and cracked wheat pottage with fresh vegetables, perfect for a wholesome main meal or light evening dish, rich in flavor and texture.

Ingredients

  • 1 cup brown lentils (dry)
  • 1 packet French onion soup
  • 1 medium carrot, grated
  • 1/2 cup cracked wheat (bulgur)
  • 1 tablespoon oil
  • 2 onions, chopped
  • 3 tablespoons parsley, chopped
  • 4 cups boiling water
  • 1 large tomato, sliced

Instructions

  1. Place cracked wheat, lentils, onion soup, and oil into boiling water.
  2. Simmer slowly for 40 minutes, stirring as needed.
  3. Add chopped onions and grated carrot, then mix well.
  4. Cook gently for 5 minutes until vegetables are soft.
  5. Transfer to a casserole dish and top with sliced tomato.
  6. Bake for 30 minutes in a moderate oven.
  7. Serve as a main entrée with vegetables or on toast with a tossed salad for a light evening meal.
