Spiced Watermelon Rind

Sweet and spiced watermelon rind preserves combine tender rind with warm spices and tangy vinegar, creating a unique treat perfect for snacking or gifting during festive seasons.

Ingredients

  • 3 lb white portion of watermelon, cubed, peel removed
  • 5 c sugar
  • 2 c cider vinegar
  • 1 c cold water
  • 1 Tbsp whole cloves
  • 1 Tbsp whole allspice
  • 1 Tbsp stick cinnamon
  • 1 lemon, sliced

Instructions

  1. Let watermelon stand in salted water overnight.
  2. Add 2 tablespoons of pickling salt to 1 quart of water.
  3. Make sure to cover all melon cubes with this solution.
  4. In the morning, drain the watermelon.
  5. Cover the watermelon with fresh water in a large pot.
  6. Cook until tender.
  7. Drain the cooked watermelon.
  8. Combine sugar, cider vinegar, cold water, cloves, allspice, cinnamon, and lemon slices in a large pot.
  9. Bring to a boil, then add the cooked watermelon rind.
  10. Simmer gently until the mixture thickens and flavors meld.
  11. Transfer to sterilized jars and seal.
