Spicy Apple Compote

Ingredients

  • 6 oz. can frozen cranberry juice cocktail concentrate
  • 3 cans cold water
  • 1 cup sugar
  • 1/2 lemon, sliced thin
  • 1 cinnamon stick (about 4 inches long)
  • 6 cloves
  • 8 medium (2 1/2 lb.) firm cooking apples, peeled, cored and halved

Instructions

  1. In a large saucepan, dissolve the cranberry juice concentrate in cold water.
  2. Add the sugar, thinly sliced lemon, cinnamon stick, and cloves to the saucepan.
  3. Bring to a boil, stirring to dissolve the sugar.
  4. Add 5 or 6 apple halves to the boiling mixture.
  5. Cook for 6 to 8 minutes, or until the apples are almost tender.
  6. Discard the lemon slices, cinnamon stick, and cloves.
  7. Chill the compote and serve, or store covered in the refrigerator for up to 3 weeks.
