Ingredients

  • 2 firm mangoes, peeled and sliced into strips
  • 1 sweet red pepper, seeded and cut into thin strips
  • 1 sweet onion (purple, red, Vidalia, Texas 1015 or Maui), cut into thin strips
  • 6 green onions, cut into thin strips
  • 1 poblano chili pepper (optional)
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup fresh lime juice
  • 1 to 2 teaspoons dried crushed red pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Combine mango, red pepper, and onion strips in a large bowl; set aside.
  2. Cut poblano chili pepper into quarters; remove seeds and membranes.
  3. Cut the poblano into thin strips and add to the mango mixture.
  4. Add green onions, lime juice, crushed red pepper, salt, and black pepper; toss to coat.
  5. Cover and chill before serving.
