Ingredients

  • 2 (15 oz.) cans black-eyed peas, drained
  • 1 (15 oz.) can white hominy, drained
  • 2 medium tomatoes, chopped
  • 4 green onions, chopped
  • 2 cloves garlic, chopped
  • 1 medium green pepper, chopped
  • 1 jalapeno pepper, chopped
  • 1/2 cup chopped onion
  • 1/2 cup chopped fresh parsley
  • 1 (8 oz.) bottle Italian dressing

Instructions

  1. Combine all ingredients in a large bowl.
  2. Mix well to combine.
  3. Pour on salad dressing and marinate for two hours.
  4. Serve with tortilla chips.
