Spicy Pounded Cucumber

Ingredients

  • 2 Cucumbers
  • 1 Dried red chili (sliced)
  • 3 tbsp Vinegar
  • 1 tbsp Sugar
  • 1 tbsp Sesame oil
  • 1 tbsp Soy sauce
  • 1/3 tsp Salt

Instructions

  1. Combine all the marinade ingredients and mix well.
  2. Add the red chili pepper.
  3. Wash the cucumbers, and pound lightly with a pestle or rolling pin until cracks appear.
  4. Cut the cucumbers into any shape.
  5. I prefer to quarter it lengthwise, then into 4 equal pieces.
  6. Add cucumbers to the marinade.
  7. Let it rest in the refrigerator for 12 hours.
  8. As the marinade will not thoroughly cover the cucumbers, mix the top and bottom cucumbers after 6 hours or so.
  9. Serve the amount you want to eat.
  10. It's best to eat the well marinated cucumbers from the bottom first.
  11. After a day, the cucumbers have shrunken and the acidity is slightly stronger.
  12. Eat within two days!
  13. Use a zip lock bag to marinate the cucumbers!
