Ingredients

  • 10 oz. frozen chopped spinach, thawed and undrained
  • 1/3 cup crushed saltines or crackers
  • 1 egg, beaten
  • 2 Tbsp. minced onion
  • 1 cup shredded Cheddar cheese

Instructions

  1. In a bowl, combine spinach, crushed saltines, beaten egg, minced onion, and salt. Stir in half of the shredded Cheddar cheese.
  2. Put the mixture into a greased 2-quart baking dish. Sprinkle the remaining cheese on top.
  3. Bake at 350°F for 30 minutes until bubbly and golden.
