Ingredients

  • 1/2 lb pork sausage
  • 1 cup cooked rice
  • 1 cup chopped celery
  • 1 small onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 egg

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine pork sausage, cooked rice, chopped celery, small chopped onion, salt, pepper, egg, and frozen or canned chopped spinach.
  3. Mix until all ingredients are well incorporated.
  4. Transfer the mixture into a greased loaf pan or shape into a loaf on a baking dish.
  5. Bake for 45 minutes to 1 hour, until cooked through.
  6. Sprinkle with cheese during the last few minutes of baking if desired.
  7. Remove from oven, let rest for a few minutes, then slice and serve.
