- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine pork sausage, cooked rice, chopped celery, small chopped onion, salt, pepper, egg, and frozen or canned chopped spinach.
- Mix until all ingredients are well incorporated.
- Transfer the mixture into a greased loaf pan or shape into a loaf on a baking dish.
- Bake for 45 minutes to 1 hour, until cooked through.
- Sprinkle with cheese during the last few minutes of baking if desired.
- Remove from oven, let rest for a few minutes, then slice and serve.
