Spinach Madeliene

Ingredients

  • 2 pkg. frozen spinach
  • 2 Tbsp. flour
  • 1/2 c. evaporated milk
  • 1/2 tsp. pepper
  • 1/2 tsp. garlic salt
  • 6 oz. roll jalapeno cheese
  • 4 Tbsp. butter
  • 2 Tbsp. finely chopped onion
  • 1/2 c. spinach liquid
  • 1/2 tsp. celery salt
  • 1 tsp. Worcestershire

Instructions

  1. Cook spinach according to directions.
  2. Drain, reserving 1/2 cup liquid.
  3. Melt butter in saucepan over low heat.
  4. Add flour, stirring until well blended, but not brown.
  5. Add onion, cooking only until soft.
  6. Stir in liquid slowly, stirring until smooth. Cook until thick; continue stirring.
  7. Add seasonings and cheese (which has been cut into cubes) and milk, stirring until cheese melts.
  8. Combine with cooked spinach; pour into buttered casserole dish and top with buttered bread crumbs.
  9. Refrigerate overnight before cooking.
  10. For a spicier dish, add a dash of red pepper. This casserole freezes very well.
