Ingredients

  • 3 pkg. frozen chopped spinach
  • 6 Tbsp. butter or oleo
  • 3 Tbsp. flour
  • 3 Tbsp. onion, chopped
  • 3/4 cup half and half
  • 3/4 cup vegetable liquid
  • 3/4 tsp. black pepper
  • 1/2 tsp. salt
  • 9 oz. jalapeno cheese

Instructions

  1. Cook spinach according to directions. Drain and reserve liquid.
  2. Melt butter or oleo in a saucepan over low heat. Add flour and stir until well blended, but not brown.
  3. Add chopped onion and cook until soft and clear.
  4. Slowly add reserved liquid, stirring constantly until smooth and thick.
  5. Add seasoning and cut-up jalapeno cheese, stirring until melted.
  6. Combine cooked spinach with the cheese sauce.
  7. Pour mixture into a casserole dish and top with buttered bread crumbs.
  8. Bake at 350°F until bubbly.
