Ingredients

  • 2 (10 oz.) packages frozen chopped spinach, thawed and drained
  • 2 cups cottage cheese, drained
  • 1 teaspoon salt
  • 1/3 cup grated Parmesan cheese
  • 2 eggs

Instructions

  1. Mix spinach, cottage cheese, salt, Parmesan cheese, and eggs until well blended.
  2. Pour the mixture into a greased 1-quart casserole.
  3. Bake at 350°F (175°C) for about 30 minutes.
  4. Let sit for a few minutes after baking to allow juices to meld.
