Ingredients

  • 1/4 cup chopped cilantro
  • 1 cup chopped onion
  • 2 teaspoons chopped garlic
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 10 ounces frozen chopped spinach, thawed
  • 1 cup Monterey Jack cheese, grated
  • 8 to 10 flour tortillas

Instructions

  1. Saute chopped cilantro, chopped onion, and chopped garlic in 1 tablespoon of olive oil until fragrant.
  2. Season with salt and pepper to taste.
  3. Add thawed chopped spinach and grated Monterey Jack cheese to the skillet.
  4. Heat until the cheese is melted and ingredients are combined.
  5. Fill tortillas with the spinach mixture, fold, and cook on a skillet until golden brown on both sides.
