Ingredients

  • 3/4 lb. raw chopped spinach or 1 pkg. frozen spinach, thawed
  • 2 c. scalded milk
  • 5 eggs
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg
  • 1/8 tsp. pepper
  • 1 lb. mushrooms

Instructions

  1. Scald the milk and pour it over beaten eggs and seasonings, then stir in the chopped or thawed spinach.
  2. Pour the mixture into a greased 1-quart mold.
  3. Set the mold in a pan of hot water and bake at 350°F for 30 minutes until the mixture is firm.
  4. Turn out the baked spinach ring onto a serving plate and fill the center with sautéed mushrooms cooked in butter.
