Ingredients

  • 1 lb. sausage
  • 1 package frozen spinach
  • 1 to 1 1/2 cups grated Swiss and Cheddar cheese
  • 1 1/2 cups milk
  • 3 eggs
  • 3/4 cup Bisquick
  • Salt and pepper to taste

Instructions

  1. Brown the sausage; drain.
  2. Place the cooked sausage in a deep pie or casserole baking dish.
  3. Heat the frozen spinach in the microwave until thawed.
  4. Drain the spinach thoroughly.
  5. Spread the drained spinach over the sausage in the dish.
  6. Top with grated Swiss and Cheddar cheese.
  7. In a bowl, blend milk, eggs, Bisquick, salt, and pepper until well combined.
  8. Pour the milk mixture slowly over the top of the cheese.
  9. Bake at 400°F (200°C) for 30 to 35 minutes until golden brown.
  10. Let the quiche rest for about 5 minutes before serving.
