Ingredients

  • 10 oz. frozen spinach, cooked and drained well
  • 1 to 2 cups shredded mozzarella cheese
  • 6 to 8 sun-dried tomatoes, coarsely chopped
  • 3/4 cup grated Parmesan cheese
  • 4 scallions, chopped
  • a little salt and pepper
  • 10 oz. pizza dough

Instructions

  1. Combine cooked and drained spinach, shredded mozzarella, chopped sun-dried tomatoes, grated Parmesan, chopped scallions, salt, and pepper in a bowl.
  2. Pat out pizza dough on wax paper into a rectangle. Spread the spinach mixture evenly over the dough, leaving a 1-inch border around the edges.
  3. Fold over all four sides of the dough by 1 inch to create a border. Starting with the edge facing you, roll up the dough jelly roll style to form a log.
  4. Transfer the rolled dough seam side down onto a greased cookie sheet. Lightly brush the top with olive oil.
  5. Prick the top of the stromboli a few times with a meat fork to prevent puffing during baking.
  6. Bake at 400°F for 20 minutes or until golden brown.
  7. Cool slightly before slicing and serving.

Tips & Substitutions

For a twist, consider adding ricotta cheese to the filling for creaminess. If you don’t have sun-dried tomatoes, roasted red peppers can be a great substitute. Ensure the spinach is thoroughly drained to prevent a soggy stromboli. You can also experiment with different cheeses like feta or provolone to suit your taste. This dish is a great way to enjoy vegetarian recipes while keeping it flavorful.

Serving Suggestions

Serve the stromboli warm, sliced into thick pieces, with a side of marinara sauce for dipping. It pairs beautifully with a fresh garden salad or garlic bread. Consider serving alongside Italian recipes like a light pasta dish or a hearty vegetable soup for a complete meal.

Storage & Reheating

Store leftover stromboli in an airtight container in the refrigerator for up to 3 days. To reheat, place slices in a preheated oven at 350°F for about 10-15 minutes until warmed through. Alternatively, you can microwave slices for about 1-2 minutes, but this may result in a softer crust.

Frequently Asked Questions

Can I use fresh spinach instead of frozen?

Yes, you can use fresh spinach! Sauté it in a pan until wilted, then drain and squeeze out excess moisture before adding it to the filling. This will ensure the stromboli remains flavorful without being watery.

What can I use instead of pizza dough?

If you don't have pizza dough, you can use store-bought puff pastry or crescent roll dough as alternatives. Just be sure to adjust the baking time accordingly, as these may cook faster than traditional pizza dough.

Can I freeze the stromboli before baking?

Absolutely! You can prepare the stromboli, wrap it tightly in plastic wrap, and freeze it. When ready to bake, thaw it in the refrigerator overnight and then bake as directed. This is a great option for meal prep.
