Creamy spinach and cheese-filled pasta pinwheels baked in a rich tomato sauce, perfect for family dinners or entertaining guests with comforting, cheesy flavors.

Ingredients

  • 16 oz. jar spaghetti sauce
  • 10 oz. package frozen spinach, thawed and well drained
  • 1 cup Ricotta cheese
  • 1 cup shredded Mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 egg, beaten
  • 6 lasagna noodles, cooked and drained

Instructions

  1. Pour half of the spaghetti sauce into a 10 x 6-inch baking dish.
  2. Combine the thawed and drained spinach, ricotta cheese, 3/4 cup shredded mozzarella, Parmesan cheese, and beaten egg; mix well.
  3. Spread each cooked and drained lasagna noodle with a scant 1/2 cup of the spinach mixture.
  4. Roll up each noodle and cut in half crosswise to make pinwheels.
  5. Place the pinwheels, cut side down, in the baking dish on top of the sauce.
  6. Top with the remaining spaghetti sauce.
  7. Cover the dish and bake at 350°F for 50 minutes.
  8. Sprinkle with the remaining shredded mozzarella and additional Parmesan cheese before serving.
