Ingredients

  • 4 eggs, separated
  • 1/4 tsp. salt
  • 1/2 tsp. cream of tartar
  • 2 tsp. cold water
  • 1/2 cup hot water
  • 1 1/2 cups sugar
  • Flour (amount not specified)

Instructions

  1. In the small bowl of an electric mixer, beat egg whites.
  2. Add 1/4 teaspoon salt and cream of tartar; beat until stiff peaks form. Set aside.
  3. In a large bowl, beat egg yolks until light in color.
  4. Add 1/4 teaspoon salt and 2 teaspoons cold water; beat until frothy.
  5. Gradually add hot water to the egg yolk mixture.
  6. Slowly add sugar, then flour to the egg yolk mixture.
  7. Fold beaten egg whites into the batter gently.
  8. Pour the batter into two 9-inch layer cake pans which have only the bottoms greased and floured.
  9. Bake at 325°F (160°C) for 30 to 35 minutes.
  10. Remove from pans and cool.
  11. Frost with Cooked Icing.
