Sponge Layer Cake
Light and airy sponge layer cake with delicate texture, perfect for celebrations or tea time. Combines sweet, fluffy layers with a classic frosting for a timeless treat.

Instructions
- In the small bowl of an electric mixer, beat egg whites.
- Add 1/4 teaspoon salt and cream of tartar; beat until stiff peaks form. Set aside.
- In a large bowl, beat egg yolks until light in color.
- Add 1/4 teaspoon salt and 2 teaspoons cold water; beat until frothy.
- Gradually add hot water to the egg yolk mixture.
- Slowly add sugar, then flour to the egg yolk mixture.
- Fold beaten egg whites into the batter gently.
- Pour the batter into two 9-inch layer cake pans which have only the bottoms greased and floured.
- Bake at 325°F (160°C) for 30 to 35 minutes.
- Remove from pans and cool.
- Frost with Cooked Icing.
