- Stir the cornmeal into rapidly boiling milk and cook until very thick, stirring constantly to prevent scorching.
- Remove from heat and allow to cool until the mixture is cold and stiff.
- Add well-beaten eggs, salt, baking powder, and melted butter to the cooled mixture.
- Beat with a mixer for 15 minutes, if time permits.
- Pour the mixture into a well-greased casserole pan or iron skillet.
- Bake at 375°F (190°C) for 30 minutes.
- Serve immediately with lots of butter. Note that the souffle will fall after baking.
