Spoon Bread is a creamy, soufflé-like cornbread with a light, fluffy texture and rich flavor, perfect as a comforting side for family meals or gatherings.

Ingredients

  • 3 cups milk
  • 1 1/4 cups white cornmeal
  • 3 eggs
  • 2 tablespoons butter
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon salt

Instructions

  1. Stir the cornmeal into rapidly boiling milk and cook until very thick, stirring constantly to prevent scorching.
  2. Remove from heat and allow to cool until the mixture is cold and stiff.
  3. Add well-beaten eggs, salt, baking powder, and melted butter to the cooled mixture.
  4. Beat with a mixer for 15 minutes, if time permits.
  5. Pour the mixture into a well-greased casserole pan or iron skillet.
  6. Bake at 375°F (190°C) for 30 minutes.
  7. Serve immediately with lots of butter. Note that the souffle will fall after baking.
