  2. In a large skillet, sauté onions and bell peppers, leaving them firm.
  3. Pull chicken off bones and set aside.
  4. Bring chicken broth to a boil.
  5. Stir cornstarch into 1/4 cup water and mix thoroughly.
  6. Pour the cornstarch mixture into the boiling chicken broth and cook until the broth thickens slightly.
  7. Add the cooked chicken, peppers, and onions to the broth mixture.
  8. Pour the meat mixture over the cooked rice in a large serving bowl.
  9. Garnish with sliced tomatoes on top.
