Ingredients

  • 1 cup sour cream with chives
  • 1 stick margarine (1/2 cup)
  • 2 tablespoons chopped onion
  • 1 (17 oz) can whole kernel corn with liquid
  • 1 (17 oz) can cream-style corn
  • 3 eggs
  • 1 (8 1/2 oz) package corn muffin mix
  • 1 cup grated Cheddar cheese

Instructions

  1. Bring sour cream to room temperature.
  2. Melt margarine and sauté chopped onion.
  3. Set aside the sautéed onion and melted margarine.
  4. Mix both cans of corn with the beaten eggs.
  5. Add the corn muffin mix and sautéed onion to the mixture.
  6. Stir in the sour cream.
  7. Pour the mixture into a greased 13 x 9-inch pan.
  8. Sprinkle grated Cheddar cheese over the top.
  9. Bake at 350°F for 45 to 50 minutes until golden brown and set.
